1/2 pear, sliced
2 tablespoons crumbled feta cheese
2 tablespoons pecan halves or chopped
1 cup baby spinach
1/4 cup grated carrots
2 tablespoons dressing (real ingredients or a homemade Italian style)
2/3 pita (save the rest to make pita chips)
In a small bowl, combine the pear slices, feta, pecans, spinach, and carrots. Drizzle with the vinaigrette, tossing well to coat the salad. Place the mixture in the pita and serve immediately.
Variation: Substitute a small sliced apple for pear and/or 1 to 2 tablespoons of shredded cheddar or goat cheese for feta. Substitute equal amounts of walnuts, almond slices, or pine nuts for pecan halves.
